Quick & Simple Wholemeal Squares
Ingredients
150g/5oz Odlums Coarse Wholemeal Flour
150g/5oz Odlums Self Raising Flour
1 Teaspoon Baking Powder
1 Tablespoon Shamrock Demerara Sugar
50g/2oz Margarine (room temperature)
1 Egg
150ml/¼ pt Milk
Method
1. Preheat oven to 200°C/400°F/Gas 6. Lightly dust a flat baking tin with some flour.
2. Put the wholemeal, self raising flour, baking powder and sugar into a bowl. Rub in the margarine with finger tips, lifting as you do to introduce air to the mixture.
3. Beat the egg and milk together and add to the dry ingredients. Mix to a soft dough.
4. Transfer to a lightly floured surface and gently knead until smooth. Place on the floured tin and press into a square or rectangle about 1" in thickness. Cut into squares. Bake for about 15 minutes until risen and golden brown.
5. Wrap in clean tea towel to cool.
