Smoked Savoury Flan
Ingredients
Pastry
225g/8oz Odlums Cream Flour
125g/4oz Margarine
Cold Water
Salt & Pepper
Filling
1 Onion (finely chopped)
1 Fillet Smoked Mackerel (flaked)
50g/2oz Button Mushrooms (chopped)
125g/4oz Grated Cheddar Cheese
300ml/½pt Milk
2 Eggs
Salt & Pepper
4 to 6 vine Tomatoes (halved)
Method
- Sieve flour, salt and pepper into a bowl. Coarsely rub in the margarine. Add sufficient water to make a soft dough.
- Lightly knead on a floured surface, roll out and use to line a 25cms/10” flan dish.
- Place onion, mackerel, mushrooms and cheese into the flan case. Arrange tomato slices on top.
- Beat eggs, milk, salt and pepper. Pour gently into flan case.
- Bake in a pre-heated oven 375°F/ 190°C/ Gas 5 for approx. 30 minutes or until golden brown and set.
- Serve hot or cold with a green Salad.
