What you need:

  • 300g / 10 oz Odlums Gluten Free Self Raising Flour
  • Pinch Shamrock Bread Soda
  • 75g / 3 oz Butter or Margarine (Room temperature)
  • 150g /5 oz Shamrock Golden Caster Sugar
  • 2 Eggs Beaten
  • 4 Medium Bananas mashed
  • 80g Packet Shamrock Chopped Walnuts

How to:

  1. Beat butter/margarine and sugar together.
  2. Add eggs and bananas and beat well.
  3. Mix in flour and bread soda.
  4. Finally stir in walnuts.
  5. Transfer to a greased and base lined 2 lb loaf tin.
  6. Bake in pre-heated oven 180°C , 350°F, Gas 4 for45 to 50 minutesapprox. until firm and well risen.
  7. Leave in tin for 5 minutes then remove from tin and cool on a wire tray.
