What you need:

  • 225g / 8oz Odlums Self Raising Flour (sieved)
  • 125g / 4oz Margarine
  • 125g / 4oz Caster Sugar
  • 2 Eggs
  • 4 tablespoons Water
  • Few drops Almond Essence
  • 175g / 6oz Sultanas

How to:

  1. Cream margarine and sugar.
  2. Beat in eggs, water and almond essence.
  3. Stir in sieved flour.
  4. Add sultanas and mix well.
  5. Transfer to greased and base lined 900g / 2lb loaf tin.
  6. Bake in preheated oven at 180°C / 350°F / Gas 4 for 45 minutes approx or until cake is golden brown and firm to the touch.
