What you need:

  • 1 medium Cooking Apple (peeled, cored, finely chopped)
  • 175g/6oz Shamrock Raisins
  • 175g/6oz Shamrock Currents
  • 175g/6oz Shamrock Sultanas
  • 100g tub Shamrock Mixed Peel
  • 125g/4oz Butter, cut into cubes
  • 100g packet Shamrock Chopped Almonds
  • 225g/8oz Shamrock Light Muscovado Sugar
  • ½ tsp Goodall's Cinnamon
  • 1 tsp Goodall's Mixed Spice
  • 150ml Brandy/Rum/Whiskey

How to:

  1. Put all ingredients except alcohol into a large saucepan.
  2. Heat gently until butter has melted.
  3. Simmer gently for about 10 minutes, stirring occasionally.
  4. Allow mixture to cool completely, then stir in the brandy, rum or whiskey.
  5. Spoon mince meat into sterilised jars, seal tightly. Store in a cool dry place.
