What you need:

  • 25g/1oz Odlums Coconut Flour
  • Good pinch of Odlums Bread Soda
  • Pinch of Salt
  • 3 tablespoons Coconut Milk
  • 2 tablespoons Coconut Oil, melted & cooled
  • 3 Eggs
  • 2 tablespoons Rowse Honey
  • 1 capful Goodall’s Vanilla Extract

To Serve

  • Buckwud Maple Syrup
  • Banana, sliced
  • Shamrock Pecan Nuts, toasted

To Fry

  • Knob of Coconut Oil

How to:

  1. Mix eggs, coconut oil and honey together. Add the coconut milk and vanilla extract, then add the flour, bread soda and salt.
  2. Gently mix (don’t over mix), stand for a few minutes while heating the pan and it will thicken a little.
  3. Melt a dab of coconut oil in a pan (don’t let it get too hot). Drop large spoonfuls of batter onto the pan.
  4. When browned on base, gently turn (be very gentle) and brown on the other side.
  5. Serve warm with maple syrup, sliced banana and toasted pecans.
