What you need:

  • 225g / 8oz Odlums Self Raising Flour
  • Pinch of Nutmeg (optional)
  • 2 Tablespoons Sugar
  • 50g / 2oz Margarine
  • 1 Egg
  • 150ml / 1/4pt Milk

Topping

  • 2 Tablespoons Sugar

Filling

  • 1 x 410g Tin Peach Slices

How to:

  1. Pre heat oven to 200°C/400°F/Gas 6.Lightly grease a Pyrex dish or a small roasting tin.
  2. Put flour, nutmeg, if used, and sugar into a bowl. Rub in the margarine until mixture resembles breadcrumbs.
  3. Lightly beat the egg and milk together and stir into the dry Ingredients. Mix to soft dough.
  4. Empty the contents of tinned fruit into the prepared dish and spoon mixture over the filling; sprinkle with the sugar and bake for about 40 minutes until risen and golden brown.
  5. Serve hot with custard, cream or ice cream.

Recipe Notes:

Any tinned fruit of choice can be used, or fresh fruit in season, or frozen fruit defrosted!
