What you need:

  • 450g/1lb Odlums Coarse Wholemeal Flour
  • 1 level teaspoon Odlums Bread Soda
  • 1 tablespoon Honey or 1 tablespoon Brown Sugar (optional)
  • 450ml/¾pt Milk
  • 125g carton Natural Yoghurt
  • 1 tablespoon Oil
  • 75g/3oz Shamrock Chopped Apricots
  • 50g/2oz Shamrock Chopped Walnuts

How to:

  1. Preheat oven to 170°C/325°F/Gas 3. Grease a 2lb loaf tin.
  2. Place wholemeal in a large mixing bowl. Sieve in bread soda.
  3. Add apricots, walnuts and sugar, if used. Mix well.
  4. Add milk, yoghurt, oil and honey, if used.
  5. Stir until all ingredients are well combined.
  6. Transfer to the loaf tin and bake in preheated oven for approx 1 hour. 
  7. Bread will be baked if base sounds hollow when tapped.
  8. Cool on a wire tray. For a soft crust, wrap bread in a clean tea towel.
