What you need:

  • 450g/1lb Odlums Cream Plain Flour
  • 225g/8oz Sugar
  • 225g/8oz Shamrock Sultanas
  • 175g/6oz Butter (room temp)
  • 300ml/ ½ pt Milk
  • Pinch Goodall's Cinnamon (optional)
  • Pinch Goodall's Nutmeg (optional)

How to:

  1. Preheat oven to 180°C/350°F/Gas 4. Grease and base line an 8" deep cake tin.
  2. Sieve the flour and spices, if used into a bowl. Rub in the butter until mixture resembles fine breadcrumbs.
  3. Add the sugar and mix well. Next mix in the sultanas. Add the milk and mix to a soft dough. Transfer to prepared tin and smooth top. Brush with a little milk if liked.
  4. Bake for about 60 minutes or until risen and golden brown. Remove from oven and allow to remain in tin for about 15 minutes. Then turn onto a wire tray to cool completely. Store in an airtight container.

Note:

Regular milk can be replaced with Soya milk.
