What you need:

  • 150g/5oz Odlums flour
  • 4 pieces of rhubarb (stripped and diced into squares)
  • 2 heaped tbsp caster sugar + 100g/3.5oz caster sugar 
  • 2 eggs
  • 1 tsp Goodall’s vanilla essence
  • 4 tbsp oil (can use melted coconut oil)
  • 1 tbsp Goodall’s cinnamon
  • Half tsp Odlums baking powder
  • 25g/1oz Shamrock flaked almonds
  • Tsp icing sugar

How to:

  1. Put the chopped rhubarb into a bowl and add 2 heaped tbsp of caster sugar. Let it sit in the sugar until you are ready to add it to the mixture.
  2. Line a bread tin with baking paper. I like to use two sheets so it can be removed easily from the tin. Put the oven on to 350°F/180°C/Gas 4.
  3. In a bowl add the eggs, caster sugar, oil and vanilla. Mix the ingredients together until it is blended to a smooth oily mixture.
  4. In a separate bowl mix the flour, baking powder and cinnamon together.  Then carefully add the oily mixture to the flour using a whisk to mix the two mixtures together. You should have a smooth thick mixture. Then add the rhubarb and the juice that forms from the rhubarb.
  5. Pure the mixture into the lined bread tin. Sprinkle the flaked Almonds on top. Then cook for 60 minutes. Stick a knife in the mixture to check it is cooked if the knife comes out clean then you know it's ready if not give it more cooking time.
  6. Once cooled sprinkle some icing sugar on top.
