What you need:

For the Cannoli Shells

250g Odlums Cream Plain Super Flour

25g Caster sugar

40g Melted butter

1 Egg

80ml Marsala Wine

For The Filling

300g Ricotta cheese

300g Mascarpone cheese

190g Icing Sugar

170g Mini Chocolate Chips (blended coarsely in a food processor)

Spray oil.

What you’ll need

Cannoli tubes or wooden dowels wrapped in tin foil.

How to:

  • In a large bowl add the sugar, melted butter, egg, Marsala wine and flour and mix well with a wooden spoon.

 

  • Place out onto a floured surface and knead well until it becomes nice and smooth. Wrap in some clingfilm and leave in the fridge for 1 hour.

 

  • Make the filling by mixing the ricotta, mascarpone and icing sugar together in a bowl. Place into a piping bag and keep in the fridge.

 

  • For the dough, roll it out as thinly as possible on a floured surface. Then cut circles with a pastry cutter.

 

  • Spray your cannoli tubes with oil and then wrap the pastry circles around them, sealing them with a brushing of some water.

 

  • Place them into the Air fryer at 200C and air-fry for 8-10 mins depending on the thickness.

 

  • Once cooked take them out and allow them to cool before removing them from the tubes.

 

  • Pipe in the filling and dip the edges in the chocolate. Enjoy.
