What you need:

  • 60g/2oz         Odlums Coconut Flour
  • 100g/3.5oz    Desiccated Coconut
  • 1 tsp                Odlums Baking powder
  • Pinch of salt
  • 50g/1.7oz       Melted Coconut Oil
  • 75g/2.5oz      Honey
  • 2 tsps              Goodalls Vanilla Essence
  • 2                      Eggs beaten
  • 50ml               Almond milk
  • 100g/3.5oz    Milk chocolate chips/chunks
  • Extra Coconut desiccated/shavings to decorate
  • Melted chocolate to drizzle

How to:

  1. Pre-heat the oven to 175C, 340F, Gas mark 3.
  2. Butter and line a 20 X 20cm baking tin.
  3. In a bowl whisk the coconut oil, honey, vanilla, eggs and almond milk. Separately mix the Odlums flour, baking powder, salt and coconut. Add the dry ingredients to the wet and mix gently, stir in the chocolate chips.
  4. Spread in the prepared baking tin, sprinkle with the extra coconut , bake for 20-25 minutes until golden and baked through.
  5. Cool and drizzle with melted chocolate.  Cut into squares or fingers.

Cooks Tips! When cool store in an airtight container.
