What you need:

  • 150g/5oz Odlums Self Raising Flour
  • 125g/4oz Butter or Margarine
  • 75g/3oz Shamrock Golden Caster Sugar
  • 1 Egg, beaten
  • A few drops Goodall's Vanilla Essence
  • Odlums Porridge Oats, for coating
  • Smarties or Shamrock Glacé Cherries, quartered

How to:

  1. Preheat oven to 180°C/350°F/Gas 4. Lightly grease 1 large or 2 small flat baking sheets.
  2. Put butter/margarine and sugar into a mixing bowl and beat until smooth and creamy. Then beat in the egg and vanilla essence.
  3. Stir in the flour and bring mixture together to form a lump of dough.
  4. With your hands roll into about 12 small balls.
  5. Put the oats into a bag and roll the balls in the oats to coat them evenly.
  6. Place the balls, spread slightly apart, on the baking sheet. Press a Smartie or quartered cherry on top of each and bake for about 15-20 minutes until lightly browned.
  7. Allow the cookies to sit on tin for a few minutes before transferring to a wire tray.
  8. When completely cold, store in an airtight tin.
