What you need:

  • 275g Odlums Wholemeal Super Flour
  • 2 tsp Odlums Baking Powder
  • 50g Demerara Sugar
  • 75g Sultanas
  • 125g Margarine (melted)
  • 250ml low fat Milk
  • 1 Egg, lightly beaten

How to:

  1. Line a muffin tin with 6 muffin cases.
  2. Mix the lightly beaten egg and milk together.
  3. Combine the other ingredients together and add the liquid mixture.
  4. Mix with a fork until just combined.
  5. Fill the six muffin cases and bake for 15-20 minutes until golden.
  6. Transfer to a wire tray to cool.
  7. Preheat oven to 190°C/Fan 170°C/375°F/Gas Mark 5.

 

Soak Sultanas in orange juice the night before to add pockets full of flavour.
