Rhubarb & Fruit Crumble

What you need:
- 6 Stalks Rhubarb (cleaned & chopped)
- 2 Apples (peeled & chopped)
- 175g/6oz Mixed Berries (Strawberries and Blueberries)
- 125g/4oz Brown Sugar
- 1 teaspoon Cinnamon
Topping:
- 175g/6oz Odlums Porridge Oatflakes
- 125g/4oz Odlums Cream Plain Flour
- 125g/4oz Brown Sugar
- 1 tsp Cinnamon
- 125g/4oz Margarine (melted)
To serve:
- 1 cup Whipped Cream with 1 tablespoon Bailey's stirred into it
How to:
- Preheat oven to 180°C/ 350°F/Gas 4. Lightly grease an oven proof dish.
- Put rhubarb and apples into a pan with the sugar. Stir over a low heat for about 10 minutes to par cook.
- Mix all the dry Ingredients together. All the melted margarine and mix to a crumble.
- Mix the par cooked fruit with the berries and cinnamon
- Spread half of the fruit mixture into the prepared dish. Spread half of crumble over this. Next pour remaining fruit on top of the crumble and finally finish with the remaining crumble.
- Bake for approximately 20 minutes until golden brown.
- Serve hot with Bailey's cream.
