What you need:

1 mug full of Odlums Self Raising Super flour

3 teaspoon baking powder

Pinch of salt

1-2 tablespoons granulated sugar (optional)

1 mug full of your chosen milk

1 egg

butter to cook pancakes.

Tres Leches sauce

1 tin condensed milk

1 tin evaporated milk

250ml cream

Toppings

Pinch of cinnamon

200ml whipped cream

 

How to:

  • In a large bowl mix together the milk, egg, Self Raising flour and salt with a whisk until well combined.

 

  • Leave in the fridge for 30 minutes to rest.

 

  • Heat a large non-stick pan on medium heat, add a teaspoon of butter and let it melt and then add two ladles full of pancake batter.

 

  • Allow to cook for 2-3 minutes and then flip once it’s golden. Cook on the other side for another 2-3 minutes and then stack them on a plate.

 

  • Make the tres leches sauce by pouring all the ingredients into a saucepan and placing it onto medium heat and stirring continuously for 10-15 mins until it reaches a nice caramel stage. Once cooked, pour it into a bowl and once it cools it will thicken. Place a layer of cling film over it to stop it from forming skin.

 

  • Later each pancake with a good spreading of the tres leches sauce. Once all stacked up, spoon over more of the sauce and then finish with a nice piping of whipped cream. Enjoy.
